[vim3-phy-usb] Migrate vim3-phy-usb composite

Migrate the vim3-phy-usb composite to composite node specs.

This involves migrating the vim3-driver. The vim3-usb-phy devices are
also renamed to "vim3_usb_phy" in order to keep the names consistent and
because hyphens cannot be used to name composites in bind files.
