[touch][focaltech] Move focaltech from Banjo to FIDL for I2C

Change the bind files so that the driver only binds to the FIDL I2C
device (focaltech-test was transitioned in a previous change).

Test: Used print-input-report to show touch inputs on Sherlock
Test: dm dump showed focaltech binding to a FIDL I2C device on Sherlock
