[display][coordinator] Migrate to display::PixelFormat.

This CL removes the transitional CoordinatorPixelFormat type, in favor
of the type developed in the api-types/cpp library.

Test: fx test //src/graphics/display
Test: Booted workbench.x64 using ffx emu start --engine qemu
Test: ffx target ssh display-tool squares
