FindHDF5: Avoid mentioning empty version when not found

Previously the not-found message confusingly mentioned an empty version
number:

    -- Could NOT find HDF5: Found unsuitable version "", ...

Don't confuse FindPackageHandleStandardArgs by defining an empty
version.
