[roll] Roll fuchsia [sysmem] fuzzer needs to call sysmem_.Bind()

Put back the call to sysmem_.Bind() which is needed. The pdev_
field used to be banjo but putting back the fidl replacement.

Also call DdkUnbind and DdkRelease in tests to avoid needing
test-specific handling in sysmem ~Device.
